Cheeseburger Soup

A warm and comforting twist on a classic cheeseburger in soup form that’s rich, creamy, and packed with flavor.

  • 1 pound ground beef
  • 1 diced onion
  • 1 diced carrot
  • a few cloves of minced garlic
  • 3 cups cubed potatoes
  • 4 cups beef broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • smoked paprika (to taste)
  • optional toppings: crispy bacon bits, fresh chives, sour cream

Instructions

  1. Begin by browning the ground beef in a large pot over medium heat for about 5-7 minutes.
  2. Drain any excess fat, then add the diced onion, diced carrot, and minced garlic. Sauté for about 5 minutes.
  3. Add the cubed potatoes to the pot and stir in your favorite seasonings.
  4. Pour in the beef broth and bring to a gentle boil. Lower the heat and simmer for 15-20 minutes until the potatoes are tender.
  5. Lower the heat again and stir in the milk and shredded cheddar cheese until melted and creamy.
  6. Adjust the seasoning if necessary and let simmer for another 5 minutes.
  7. Ladle into bowls and garnish with toppings of your choice.

Notes

This soup is versatile; feel free to add veggies or swap proteins. For an extra cheesy version, add more cheese!
