  • 2 cups mixed vegetables (carrots, celery, peas)
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme (fresh or dried)
  • 1 teaspoon rosemary (fresh or dried)
  • Salt and pepper to taste
  • Optional: red pepper flakes or lemon juice for serving

Instructions

  1. Prep your veggies: Wash and chop your mixed vegetables into bite-sized pieces.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat and add chopped onions and garlic, cooking until golden.
  3. Cook the turkey: If using ground turkey, add it now and cook until browned.
  4. Add the veggies: Stir in the mixed veggies and sauté for about 5 minutes.
  5. Add the broth: Pour in the broth and bring to a gentle simmer.
