20-Minute Spinach Blueberry Salad

A fresh and vibrant salad combining baby spinach, juicy blueberries, creamy avocado, and crunchy walnuts, drizzled with a delicious homemade dressing.

  • 4 cups baby spinach
  • 2 cups fresh blueberries
  • 1 cup raw walnuts
  • 1 medium-large avocado
  • 1/2 cup goat cheese
  • 1/4 cup fresh mint
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 1/2 a lemon, juice only
  • 1 tsp garlic powder
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients: Wash and dry spinach and blueberries.
  2. Chop and slice the avocado and crumble the goat cheese.
  3. Toast the walnuts in a dry skillet over medium heat for 3–5 minutes (optional).
  4. Make the dressing by whisking together olive oil, balsamic vinegar, lemon juice, garlic powder, honey, salt, and pepper.
  5. Assemble the salad in a large bowl and drizzle with half the dressing.
  6. Adjust the seasoning with more salt, pepper, or dressing to taste.
  7. Garnish with torn mint leaves before serving.

Notes

This salad is quick to prepare and can be customized with various proteins or fruits.
