Refreshing Marinated Cucumber Salad

A crisp and zesty cucumber salad, perfect for warm days and barbecues.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons sesame oil
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Wash the cucumbers under cool water and slice them thinly.
  2. Whisk together the rice vinegar, sugar, salt, black pepper, red pepper flakes, and sesame oil in a bowl.
  3. Combine the sliced cucumbers with the dressing in a large mixing bowl.
  4. Toss in the green onions and sesame seeds.
  5. Marinate in the refrigerator for at least 30 minutes.
  6. Serve and enjoy!

Notes

This salad is great served fresh, but can be made a day in advance. Add sesame seeds and green onions right before serving.
