Coconut Mango Bliss Balls

  • 1 cup glutinous rice flour
  • 1 cup coconut milk
  • 1/2 cup granulated sugar
  • 1 pinch salt
  • 1/2 cup water
  • 1/2 cup mango puree (fresh)
  • 1 cup shredded desiccated coconut (unsweetened)

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, combine the glutinous rice flour and salt. Give it a gentle whisk to mix them well.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the coconut milk, water, and granulated sugar until the sugar is dissolved.
  3. Combine and Form the Dough: Gradually add the wet mixture to the dry ingredients, mixing with a spatula or your hands to form a cohesive dough.
  4. Add Mango Puree: Gently fold in the mango puree until well incorporated.
  5. Shape the Bliss Balls: Use your hands to form small balls, about the size of a tablespoon.
  6. Chill and Set: Place the bliss balls on a plate lined with parchment paper and refrigerate for about 30 minutes.
