  • 1 cup pumpkin puree
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ¼ cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • Optional: Glaze or cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. Combine dry ingredients in a bowl.
  3. Mix brown sugar, granulated sugar, and oil until well combined, then add pumpkin puree and mix until smooth.
  4. Add eggs and vanilla, whisking until smooth and fluffy.
  5. Combine dry and wet mixtures gently to avoid overmixing.
  6. Spoon batter into the donut pan about 2/3 full.
  7. Bake for 10-12 minutes until a toothpick comes out clean.
  8. Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
