Chicken Taco Bowl

  • 1 lb Chicken (boneless, skinless breast or thighs)
  • 1 cup Rice (white or brown)
  • 1 can Beans (black beans or pinto beans)
  • 1 cup Salsa (store-bought or homemade)
  • 1 tablespoon Olive oil
  • Spices: chili powder, cumin, garlic powder, salt, and pepper
  • Optional toppings: cilantro, diced avocado, sliced jalapeños, Greek yogurt

Instructions

  1. Rinse the rice under cold water to remove excess starch.
  2. Combine the rinsed rice with water in a 1:2 ratio (1 cup rice to 2 cups water).
  3. Bring to a boil, then reduce to low heat, cover, and let simmer for 15-20 minutes. Let it sit for 5 minutes after cooking for perfect texture.
  4. Season your chicken with a mix of chili powder, cumin, garlic powder, salt, and pepper.
  5. Heat olive oil in a skillet over medium-high heat. Once hot, add chicken and cook for 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
  6. Open the can of beans, drain, and rinse.
  7. Heat the beans in a small saucepan over medium-low heat for 5-7 minutes; stir in cumin or lime juice for added flavor.
  8. Start with rice at the bottom of your bowl, then layer sliced chicken, beans, and finish with salsa.
  9. Top with fresh cilantro, diced avocado, sliced jalapeños, or Greek yogurt.
