Cowboy Butter Potatoes

A deliciously simple dish of red baby potatoes slathered in a garlicky, buttery sauce, perfect for any gathering.

  • 680 g red baby potatoes, halved
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 56 g unsalted butter, melted
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon paprika or smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Prep the potatoes: Start by washing the red baby potatoes and halving each one.
  2. Boil the potatoes: Place the halved potatoes in a pot, cover with cold water, add salt, and bring to a boil. Simmer until fork-tender.
  3. Drain and dry: Drain the potatoes in a colander and let them sit for a few minutes.
  4. Make the Cowboy Butter sauce: In a bowl, mix melted butter, garlic, mustard, lemon juice, parsley, paprika, red pepper flakes, salt, and pepper.
  5. Sear the potatoes: Heat a skillet, add oil, and sear the cut-side of the potatoes until browned.
  6. Coat the potatoes: Turn the potatoes and pour the Cowboy butter sauce over them. Cook for another few minutes.
  7. Final flavors: Toss the potatoes to coat in the sauce and heat through.
  8. Plate up: Transfer the potatoes to a serving dish and drizzle with remaining sauce.

Notes

These potatoes can be served warm with a sprinkle of parsley and pair beautifully with grilled meats or salad.
