Cream Cheese Corn Casserole

  • 2 cups (300 g) whole kernel corn, drained
  • 1 cup (240 g) cream-style corn
  • 4 oz (115 g) cream cheese, softened and cubed
  • ¼ cup (60 g) unsalted butter, melted
  • ½ cup (120 ml) whole milk
  • 1 large egg
  • ½ cup (65 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (50 g) shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare Your Dish: Lightly grease a baking dish.
  3. Mix the Wet Ingredients: In a large bowl, whisk together cream cheese, melted butter, whole milk, and the egg until smooth.
  4. Add the Corn: Toss in whole kernel corn and cream-style corn, then stir gently.
  5. Combine Dry Ingredients: In another bowl, whisk together flour, sugar, baking powder, salt, and pepper.
  6. Mix Them Together: Gradually add the dry mixture to the wet mixture, stirring until just combined.
  7. Cheese, Please: Fold in half of the shredded cheddar and sprinkle the remaining half on top.
  8. Pour and Spread: Carefully pour the mixture into the prepared baking dish.
  9. Bake Away: Bake for about 45-55 minutes until edges are golden and bubbly.
  10. Cool and Serve: Let cool for about 10 minutes before serving.
