Chicken Gnocchi Skillet

A deliciously cozy dish featuring tender chicken, pillowy gnocchi, and vibrant spinach in a creamy sauce.

  • 1 lb boneless, skinless Chicken Breast, cut into bite-sized pieces
  • 1 lb Gnocchi
  • 2 cups Fresh Spinach
  • 1 cup Cream (or half-and-half)
  • 2 cloves Garlic, minced
  • 1 cup Chicken Broth
  • 1/2 cup Parmesan Cheese, grated
  • 1 tbsp Olive Oil
  • Salt and pepper to taste

Instructions

  1. Prep your chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
  2. Sauté the chicken in a skillet with olive oil over medium heat for 5-7 minutes until golden brown and cooked through. Transfer to a plate.
  3. Cook the gnocchi in the same skillet for about 3-4 minutes until they start to brown slightly.
  4. Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
  5. Pour in the chicken broth and cream, stirring to combine and scraping any bits off the bottom of the pan.
  6. Combine the chicken and fresh spinach, then let everything simmer for 5-7 minutes.
  7. Stir in the grated Parmesan cheese until melted and creamy.
  8. Serve the Chicken Gnocchi Skillet, garnished with extra cheese and black pepper if desired.

Notes

For added flavor, you can incorporate vegetables or fresh herbs, and reheating can be done gently on the stove with a splash of broth.
