Spinach Mushroom Pasta

A comforting and flavorful pasta dish made with fresh spinach and mushrooms, perfect for any occasion.

Ingredients

  • 8 oz pasta (spaghetti, fettuccine, or whole-grain)
  • 8 oz mushrooms (button, cremini, or shiitake)
  • 4 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta, and cook according to package directions until al dente.
  2. Sauté the Mushrooms: In a skillet, heat olive oil over medium heat, add sliced mushrooms, and sauté for 5-7 minutes.
  3. Add Garlic: Toss in minced garlic and sauté for 1-2 minutes until fragrant.
  4. Incorporate Spinach: Add fresh spinach and stir until wilted, about 3-4 minutes.
  5. Combine Pasta and Sauce: Drain pasta, add to skillet, and toss with veggies, adding reserved pasta water as needed.
  6. Finish with Parmesan: Sprinkle in grated Parmesan and toss until melted and combined.
  7. Plate and Serve: Transfer to bowls and garnish with more Parmesan if desired.
