French Onion Chicken

A delightful dish that combines succulent chicken breasts with caramelized onions and melted Gruyère cheese for a comforting and nostalgic meal.

  • 4 Chicken Breasts
  • 3 large Yellow Onions
  • 1 cup Gruyère Cheese, grated
  • 2 tablespoons Olive Oil
  • 1 teaspoon Fresh Thyme
  • Salt and Pepper to Taste
  • 1 cup Chicken Broth

Instructions

  1. Caramelize the onions: In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt; stir frequently for 20-25 minutes until golden brown.
  2. Add thyme: Stir in fresh thyme once onions are caramelized.
  3. Sear the chicken: Season chicken breasts with salt and pepper, heat olive oil in a separate pan, and cook chicken for 5-7 minutes on each side.
  4. Combine everything: Transfer seared chicken to a baking dish, layer caramelized onions on top, and pour chicken broth in the bottom.
  5. Top with Gruyère: Bake at 375°F (190°C) for 25 minutes, then sprinkle cheese and bake uncovered for an additional 10 minutes until bubbly and golden.

Notes

Serve with mashed potatoes or a fresh green salad. For added flavor, sprinkle extra thyme on top before serving.
