Garlic Herb Roasted Summer Squash

A vibrant dish featuring garlic and herbs that enhance the natural sweetness of summer squash, making it a delicious and simple side.

  • 2 lbs summer squash (zucchini and yellow squash)
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the summer squash by rinsing and slicing into rounds or half-moons, about 1/2-inch thick.
  3. Mix the sliced squash in a large bowl with olive oil, minced garlic, thyme, oregano, smoked paprika, salt, and pepper until evenly coated.
  4. Spread the squash mixture on a lined baking sheet in a single layer.
  5. Roast in the oven for 20–25 minutes, tossing halfway through for even cooking.
  6. Finish by sprinkling Parmesan cheese over the roasted squash and return to the oven for an additional 2-3 minutes. Drizzle with fresh lemon juice and garnish with parsley before serving.

Notes

Customize your squash by adding diced red pepper or using fresh herbs for a fresher taste.
