Harvest Chicken Casserole

A cozy feast for the soul featuring tender chicken, sweet potatoes, vibrant broccoli, and melted cheddar cheese that warms your heart.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups broccoli florets
  • 1 ½ cups shredded cheddar cheese
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss cubed sweet potatoes into boiling salted water and cook for 10-12 minutes until fork-tender. Drain and set aside.
  3. In a large mixing bowl, combine shredded chicken, broccoli, garlic powder, salt, and pepper. Stir until well coated.
  4. In a greased 9×13 inch casserole dish, layer cooked sweet potatoes evenly at the bottom.
  5. Top with the chicken and broccoli mixture, spreading it evenly.
  6. Pour chicken broth over the dish.
  7. Sprinkle shredded cheddar cheese on top.
  8. Bake for about 30-35 minutes, until cheese is melted and bubbly.
  9. Let it rest for 10 minutes before serving.

Notes

This dish can be prepared a day in advance and stored in the refrigerator. Leftovers last up to 3 days in the fridge and freeze well.
