One-Pan Honey BBQ Chicken Rice

  • 2 cups long-grain rice (or basmati/jasmine)
  • 2 cups water or chicken broth
  • 1 lb boneless, skinless chicken breast, cut into pieces
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Prep the ingredients by cutting chicken into bite-sized pieces and chopping green onions.
  2. Sauté the chicken in a skillet with olive oil, seasoning with salt and pepper, until golden brown.
  3. Mix in soy sauce, garlic powder, onion powder, honey, and BBQ sauce, stirring to coat the chicken.
  4. Add the rice evenly over the chicken, then pour in water or broth without stirring.
  5. Bring to a simmer, then cover and reduce heat, cooking for about 20 minutes.
  6. Remove the lid, stir gently, and adjust seasoning if necessary.
  7. Serve portions onto plates or bowls, garnished with green onions.
