Roasted Beet Goat Cheese Salad

A vibrant salad featuring earthy roasted beets, tangy goat cheese, crunchy walnuts, and peppery arugula.

  • 4 medium Beets
  • 4 oz Goat Cheese
  • 4 cups Arugula
  • 1/2 cup Walnuts
  • 2 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil, drizzle with olive oil, and season with salt and pepper.
  2. Place them on a baking sheet and roast for about 45-60 minutes, or until tender. The kitchen will fill with a delightful aroma!
  3. While the beets are roasting, take a large bowl and toss in your arugula.
  4. Add a drizzle of olive oil and a pinch of salt to slightly massage the greens.
  5. Heat a small, dry skillet over medium heat. Add the walnuts and toast for about 5 minutes, stirring frequently until golden and fragrant.
  6. In a small bowl, whisk together equal parts balsamic vinegar and olive oil, seasoning with salt and pepper to taste.
  7. Once the beets are roasted and cooled, peel off the skins and chop them into bite-sized pieces.
  8. Toss the roasted beets onto the arugula, crumble the goat cheese on top, and sprinkle the toasted walnuts over.
  9. Drizzle your homemade dressing over the salad, gently tossing everything together.
  10. Serve on individual plates for an elegant presentation or in one big bowl for a casual meal.

Notes

Best enjoyed fresh, but leftovers can be stored if dressing is kept separate until ready to serve.
