Turkey Sweet Potato Skillet

A flavorful one-skillet meal combining lean ground turkey, sweet potatoes, and fresh spinach, perfect for quick weekday dinners.

  • 1 lb Ground Turkey
  • 2 Medium Sweet Potatoes, diced
  • 4 Cups Fresh Spinach
  • 1 Small Onion, diced
  • 2 Cloves Garlic, minced
  • 1 tsp Paprika
  • Salt and Pepper, to taste
  • Olive Oil, for cooking

Instructions

  1. Prep the sweet potatoes by peeling and dicing them into small cubes.
  2. Heat a large skillet over medium heat and add olive oil.
  3. Add diced sweet potatoes to the skillet, season with salt and pepper, and sauté for about 10 minutes.
  4. Add onion and garlic to the skillet and sauté for another 3-5 minutes.
  5. Brown the ground turkey in the skillet until no longer pink, about 5-7 minutes.
  6. Add in fresh spinach and stir until wilted.
  7. Taste and adjust seasoning as needed.
  8. Serve garnished with fresh herbs if desired.

Notes

This dish can be made ahead and stored in the fridge for up to 3 days. Thaw frozen sweet potatoes beforehand for even cooking.
