Chicken Rice Soup

A comforting chicken rice soup that’s hearty, flavorful, and perfect for chilly evenings.

Ingredients

  • Chicken (boneless breasts, thighs, or whole chicken cut into pieces)
  • Rice (long-grain white, brown, or jasmine)
  • Carrots
  • Celery
  • Broth/Stock (homemade or store-bought, low-sodium)
  • Onion
  • Garlic
  • Herbs (parsley or thyme)
  • Olive Oil (or butter)

Instructions

  1. Prepare your ingredients: Chop onions, carrots, celery, and garlic.
  2. Sauté the aromatics: Heat olive oil in a large pot, add onions, celery, and carrots, and sauté for 5-7 minutes. Add garlic in the last minute.
  3. Add the chicken, pouring in enough broth to cover it. Bring to a boil, then simmer for about 15 minutes.
  4. Incorporate the rice: Remove the chicken, stir in the rice, and cook for 15-20 minutes.
  5. Shred the chicken into bite-sized pieces and return to the pot.
  6. Season to taste with salt, pepper, and herbs.
  7. Final touch: Squeeze fresh lemon juice before serving.

Notes

Top with parsley or black pepper. Serve with crusty bread or salad for a complete meal.
