Chicken Noodle Soup

A warm, hearty chicken noodle soup that brings comfort and connection, perfect for chilly days.

Ingredients

  • 1 whole chicken or chicken thighs (bone-in preferred)
  • 8 oz egg noodles
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt, to taste
  • Pepper, to taste
  • 8 cups chicken stock or broth

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5-7 minutes until softened.
  2. Add the chicken and minced garlic to the pot. Sear for 3-4 minutes until lightly golden.
  3. Pour in the chicken broth, add bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer. Cook for 30-40 minutes for whole chicken or 20-25 minutes for pieces.
  4. Remove the chicken, let it cool slightly, and then add noodles to the broth, cooking according to package directions (about 5-7 minutes).
  5. Shred the chicken into bite-sized pieces, discarding bones and skin. Return chicken to the pot and stir to combine.
  6. Taste the broth and adjust seasoning as needed. Remove bay leaf and stir in chopped parsley.

Notes

Serve hot with a sprinkle of fresh parsley and warm, crusty bread. Can be frozen for up to three months.
