Balsamic Pot Roast

A comforting and flavorful pot roast enriched with balsamic vinegar, perfect for family gatherings and cozy dinners.

Ingredients

  • Chuck Roast (3-4 lbs)
  • Carrots (3-4 medium)
  • Balsamic Vinegar (½ cup)
  • Onions (1 large, quartered)
  • Garlic (4 cloves, minced)
  • Beef Broth (2 cups)
  • Thyme (1 teaspoon, dried or 4-5 sprigs, fresh)
  • Salt and Pepper to taste
  • Olive Oil (2 tablespoons)

Instructions

  1. Prep Your Ingredients: Gather all your ingredients and give them a good rinse and chop.
  2. Sear the Chuck Roast: Heat olive oil over medium-high heat and sear the chuck roast for 4-5 minutes on each side.
  3. Remove the roast and toss in the onions, sautéing for 3-4 minutes until translucent.
  4. Add the carrots, balsamic vinegar, and beef broth. Return the roast to the pot.
  5. Sprinkle in the dried thyme and give everything a good stir.
  6. Preheat your oven to 300°F (150°C) and transfer the pot to cook for 3-4 hours.
  7. Shred and serve: Use two forks to shred the meat and serve with sauce and carrots.

Notes

For extra flavor, you can add potatoes or parsnips and serve over mashed potatoes or polenta. Leftovers can be stored in an airtight container for up to 3-4 days.
