Beef Bourguignon

A classic French stew of beef braised in red wine, enriched with mushrooms, carrots, and aromatic herbs, perfect for cozy gatherings.

  • 2 lbs Beef Chuck, cut into 2-inch cubes
  • 8 oz Mushrooms, sliced
  • 2 large Carrots, chopped
  • 1.5 cups Red Wine (dry)
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 2 cups Beef Broth
  • Fresh Thyme, to taste
  • Olive Oil, for cooking
  • Salt and Pepper, to taste
  • Optional: Bay Leaves, Parsley, Oregano or Rosemary

Instructions

  1. Prep your ingredients: chop vegetables and prepare beef cubes.
  2. Sear the beef in a hot Dutch oven with olive oil until golden brown.
  3. Sauté onions until softened, then add garlic and stir.
  4. Add mushrooms and carrots and cook until browned.
  5. Deglaze the pot with red wine, scraping up the browned bits.
  6. Combine beef, broth, and herbs, bring to a simmer.
  7. Cover and let stew for 1.5 to 2 hours until beef is fork-tender.
  8. Let rest briefly, then adjust seasoning if necessary.

Notes

Serve over mashed potatoes or noodles and garnish with parsley. This dish tastes even better the next day!
