Beef & Butternut Squash Chili

A heartwarming beef chili with sweet butternut squash, rich tomatoes, and wholesome beans, perfect for cozy nights.

  • 1 lb Ground Beef
  • 2 cups Butternut Squash (peeled and diced)
  • 1 can Beans (kidney or black beans)
  • 1 can Canned Tomatoes (diced or crushed)
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tbsp Chili Powder
  • 1 tsp Cumin
  • Salt and Black Pepper (to taste)
  • 1 tbsp Olive Oil

Instructions

  1. Prepare the butternut squash by peeling and dicing into small cubes.
  2. Heat olive oil in a large pot over medium heat and sauté the onion with salt until translucent.
  3. Add minced garlic and sauté for an additional minute.
  4. Brown the ground beef until no pink remains, about 6-8 minutes.
  5. Sprinkle in chili powder, cumin, salt, and pepper; stir to coat the beef.
  6. Add diced butternut squash, canned tomatoes, and beans; give it a good stir.
  7. Pour in water or broth to cover the ingredients, bring to a gentle boil, then reduce the heat and simmer covered for 30-40 minutes.
  8. Taste and adjust seasonings as needed before serving.
  9. Serve in bowls, garnished with toppings like cilantro, sour cream, or cheese.

Notes
