Hearty Beef Vegetable Soup

A comforting classic beef vegetable soup that warms the soul and nourishes the body.

Ingredients

  • 1 pound beef chuck roast or stew meat, cut into 1-inch cubes
  • 2 medium-sized potatoes, peeled and diced
  • 2 large carrots, sliced
  • 1 cup frozen peas
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ½ cup red wine or beef broth
  • 6 cups beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium-high heat. Add beef cubes in a single layer. Sear for about 4-5 minutes on each side until browned.
  2. Remove the beef and set aside. Add chopped onion and minced garlic to the pot, sauté for 3 minutes until fragrant.
  3. Deglaze the pot with red wine or beef broth, scrapping up the browned bits from the bottom.
  4. Return the beef to the pot and add 6 cups of beef broth. Optionally, add a tablespoon of tomato paste for richer flavor.
  5. Add the diced potatoes, sliced carrots, and can of diced tomatoes along with their juices. Bring to a boil, then reduce heat to low and simmer for 45 minutes to 1 hour.
  6. Stir in frozen peas 10 minutes before serving. Adjust spices to taste.

Notes

Garnish with fresh parsley or cheese. Pair with crusty bread for a complete meal.
