1 pound beef chuck roast or stew meat, cut into 1-inch cubes
2 medium-sized potatoes, peeled and diced
2 large carrots, sliced
1 cup frozen peas
1 can (14 oz) diced tomatoes
1 onion, chopped
2 cloves garlic, minced
½ cup red wine or beef broth
6 cups beef broth
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Heat a tablespoon of olive oil in a large pot over medium-high heat. Add beef cubes in a single layer. Sear for about 4-5 minutes on each side until browned.
Remove the beef and set aside. Add chopped onion and minced garlic to the pot, sauté for 3 minutes until fragrant.
Deglaze the pot with red wine or beef broth, scrapping up the browned bits from the bottom.
Return the beef to the pot and add 6 cups of beef broth. Optionally, add a tablespoon of tomato paste for richer flavor.
Add the diced potatoes, sliced carrots, and can of diced tomatoes along with their juices. Bring to a boil, then reduce heat to low and simmer for 45 minutes to 1 hour.
Stir in frozen peas 10 minutes before serving. Adjust spices to taste.
Notes
Garnish with fresh parsley or cheese. Pair with crusty bread for a complete meal.
