Cabbage Roll Soup

A comforting bowl of Cabbage Roll Soup packed with savory flavors and perfect for weeknight dinners.

  • 1 lb Ground Beef
  • 1 head Green Cabbage, chopped
  • 1 cup Long-grain Rice
  • 1 can (14 oz) Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Italian Seasoning
  • 1/2 tsp Paprika
  • 1 tsp Sugar
  • Olive Oil, for sautéing

Instructions

  1. Sauté the aromatics: Warm olive oil in a large pot over medium heat. Add diced onion and minced garlic, stirring until soft, about 3-4 minutes.
  2. Brown the beef: Push aromatics to the side, add ground beef and cook until no longer pink, about 5-7 minutes. Season with salt and pepper.
  3. Incorporate the cabbage: Stir in chopped cabbage and sauté for another 5 minutes until it starts to soften.
  4. Add the liquids: Pour in diced tomatoes and vegetable broth, stirring to combine.
  5. Season it up: Sprinkle in Italian seasoning and paprika, adjusting to taste.
  6. Simmer and cook the rice: Bring to a boil, then reduce heat to low. Add rice, cover, and simmer for 20-25 minutes until rice is tender.
  7. Final touches: Taste and adjust seasoning as necessary, adding sugar to mellow out acidity.
  8. Serve it up: Ladle into bowls and garnish with parsley or sour cream.

Notes

This soup can be frozen for up to 3 months. It can also be adapted to be vegetarian by replacing ground beef with lentils or chickpeas.
