Chicken Pot Pie Soup

A creamy and hearty chicken pot pie soup that warms your heart and satisfies your cravings, perfect for chilly evenings.

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup green peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the Veggies: In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they’re translucent, about 3-4 minutes.
  2. Add Your Garlic: Stir in your minced garlic and cook for an additional minute.
  3. Stir in the Veggies: Toss in your diced carrots, celery, and potatoes. Give everything a good stir and let it cook for about 5-7 minutes.
  4. Pour in the Broth: Pour in the chicken broth and bring everything to a simmer.
  5. Add Chicken and Peas: After about 15 minutes, stir in your shredded chicken and green peas.
  6. Pour in the Cream: Finally, add the heavy cream and dried thyme. Stir gently to combine.
  7. Garnish and Serve: Ladle the soup into bowls and garnish with freshly chopped parsley.

Notes

This soup thickens as it sits; add a splash of broth or cream during reheating. Freezes well for up to three months.
