Creamy Broccoli Cheddar Soup

  • 4 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 2 medium carrots, diced
  • 1 cup heavy cream
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon juice (optional)
  • Red pepper flakes (optional)

Instructions

  1. Prepare the veggies: Start by washing and chopping the broccoli into small florets and dicing the carrots and onions finely.
  2. Sauté aromatics: In a large pot, add olive oil and sauté the onions for about 3-4 minutes until translucent. Add minced garlic and cook for another minute.
  3. Add the broccoli and carrots: Sauté for another 5-6 minutes, stirring frequently.
  4. Pour in the broth: Add vegetable broth, simmer, cover, and cook for about 15 minutes until veggies are tender.
  5. Blend it up: Use an immersion blender to blend the soup to your desired consistency.
  6. Cheese it up: Stir in shredded cheddar cheese until melted, then blend in the cream.
  7. Final seasoning: Taste and add salt, pepper, and optional lemon juice or red pepper flakes.
  8. Serve it up: Ladle into bowls and garnish with extra cheddar or broccoli florets.

Notes

This soup can be made ahead and tastes even better the next day. Store in the fridge for up to 3 days and reheat on the stovetop.
