Chicken Corn Chowder

A warm and comforting bowl of chicken corn chowder, perfect for chilly evenings and family gatherings.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 cups fresh or frozen corn
  • 2 medium Yukon gold or russet potatoes, diced
  • 1 cup heavy cream or half-and-half
  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 1 tsp fresh thyme
  • Optional: diced jalapeños, fresh herbs, crispy bacon, or sour cream for topping

Instructions

  1. Prep the ingredients: Dice the chicken, chop the onion, mince the garlic, and dice the potatoes.
  2. Cook the chicken: In a large pot, heat olive oil over medium heat, add chicken and season with salt and pepper, cooking until golden brown (5-7 minutes).
  3. Sauté the aromatics: Add onion and garlic to the pot and sauté for 3-4 minutes until translucent.
  4. Add the potatoes and broth, cover, bringing to a gentle simmer for about 15 minutes or until potatoes are fork-tender.
  5. Stir in the corn and cream, allowing it to simmer for 5-10 minutes to thicken.
  6. Season to taste and adjust as preferred.
  7. Serve warm, garnished with fresh herbs or toppings of choice.

Notes

For a thicker chowder, mash some of the potatoes against the side of the pot. This chowder can be made ahead of time and reheats well.
