Instructions

  1. Sauté the aromatics: Heat a large pot over medium heat, add olive oil, then toss in onions and garlic. Sauté for about 3-5 minutes until translucent.
  2. Add the veggies: Stir in the diced carrots and celery, cooking for about 5-7 minutes until softened.
  3. Introduce the chicken: Add the diced chicken and cook for 5 minutes until it starts to lose its pinkness.
  4. Incorporate the grain: Mix in the wild rice and cook for an additional minute.
  5. Pour in the broth: Add chicken broth, bring to a boil, reduce to a simmer, and let it cook for 30-40 minutes until the wild rice is tender.
  6. Finish with cream: Stir in the cream and allow it to warm up.
  7. Season to taste: Adjust with salt and pepper as needed, and consider stirring in lemon juice or hot sauce.
  8. Prep for serving: Let it sit for a few minutes and garnish with fresh herbs before serving.
