  • 1 lb Italian sausage
  • 1 can (15 oz) pumpkin puree
  • 1/2 cup fresh sage, chopped (or dried sage)
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Red pepper flakes, optional
  • Maple syrup or honey, optional
  • Olive oil, for drizzling
  • Parmesan cheese, for serving (optional)

Instructions

  1. Brown the sausage by heating a large pot over medium heat. Add the Italian sausage and cook until it’s browned, about 5-7 minutes.
  2. Sauté the chopped onion and minced garlic until the onion is translucent, about 3-4 minutes.
  3. Add the pumpkin puree and stir well, then pour in the broth and bring to a simmer for 10-15 minutes.
  4. Season with chopped fresh sage, cooking for another 5 minutes.
  5. Taste and adjust flavors with salt, pepper, and optional sweeteners.
  6. Blend the soup with an immersion blender for a creamier texture, if desired.
  7. Serve in bowls, garnished with fresh sage and a drizzle of olive oil.

Notes

For variations, consider adding jalapeños for spice or replacing sausage with beans for a vegetarian option.
