  • 4 Roasted Red Peppers
  • 2 Fresh Tomatoes
  • 1 cup Heavy Cream
  • 1 Onion
  • 3 cloves Garlic
  • 4 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • Salt to taste
  • Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Prep the Ingredients: Gather and chop the ingredients, dice the onion, and mince the garlic. Roast the peppers if using fresh.
  2. Sauté the Aromatics: Heat olive oil in a large pot, add onions, and cook until soft. Stir in minced garlic.
  3. Add the Tomatoes and Peppers: Combine the tomatoes and roasted peppers, cooking for about 5 minutes.
  4. Pour in the Broth: Add vegetable broth, bring to a boil, then reduce to a simmer for 15-20 minutes.
  5. Blend it Up: Use an immersion blender or transfer to a blender, blend until smooth.
  6. Stir in the Cream: Return to low heat and mix in the heavy cream, adjusting seasoning if needed.
  7. Garnish and Serve: Ladle into bowls, garnish with basil, and add a drizzle of olive oil.

Notes

For a lighter version, substitute heavy cream with coconut milk. Feel free to add protein like chicken or chickpeas.
