Creamy Spinach Chicken Soup

A warm and cozy soup filled with tender chicken, vibrant spinach, and a rich, creamy broth.

  • 1 lb Chicken (boneless, skinless thighs or breasts)
  • 4 cups Fresh Spinach
  • 1 cup Heavy Cream
  • ½ cup Parmesan Cheese (freshly grated)
  • 4 cups Chicken Broth
  • 3 cloves Garlic (minced)
  • 1 Onion (chopped)
  • 2 tbsp Olive Oil or Butter
  • Salt and Pepper to taste

Instructions

  1. Prep your ingredients: Start by cubing your chicken into bite-sized pieces. Chop the garlic and onion. If using fresh spinach, give it a good rinse and roughly chop it.
  2. Cook the chicken: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chicken and season with salt and pepper. Sauté for about 5-7 minutes until lightly browned and cooked through.
  3. Add the aromatics: Once your chicken is cooked, add the chopped onions and garlic to the pot. Sauté for another 2-3 minutes until they’re translucent and fragrant.
  4. Pour in the broth: Pour in 4 cups of chicken broth and let it come to a gentle simmer.
  5. Incorporate the spinach: Once simmering, stir in the fresh spinach. Cook for an additional 2-3 minutes.
  6. Make it creamy: Lower the heat and pour in 1 cup of heavy cream. Stir well and let the flavors meld for about 5 minutes.
  7. Add Parmesan: Stir in ½ cup of grated Parmesan cheese until melted and fully combined.
  8. Serve it up: Ladle the soup into bowls and enjoy!

Notes

Pairs well with garlic bread or a side salad. For a zesty kick, add lemon wedges.
