French Onion Soup

A comforting bowl of French onion soup made with sweet caramelized onions, rich beef broth, and bubbly melted Gruyère cheese.

Ingredients

  • 4 large yellow or sweet onions
  • 4 cups beef broth (or vegetable broth for a lighter option)
  • 1 baguette (or hearty bread)
  • 1 1/2 cups Gruyère cheese (or Emmental/Swiss cheese)
  • 2 tablespoons butter
  • Olive oil
  • Salt and pepper to taste
  • Fresh thyme or chives (for garnish)

Instructions

  1. Slice the onions thinly.
  2. Caramelize the onions in a pot with butter and olive oil for 30-40 minutes.
  3. Add the beef broth and season with salt and pepper; simmer for 15-20 minutes.
  4. Prepare the baguette by slicing it and toasting if desired.
  5. Ladle the soup into bowls and top with baguette slices and Gruyère cheese.
  6. Broil the bowls until the cheese is bubbly and golden.
  7. Serve with a garnish of thyme or chives.

Notes

For a vegetarian option, substitute vegetable broth and omit meat-based seasonings. You can also enhance the flavor with herbs or wine.
