Beef Barley Soup

A heartwarming Beef Barley Soup that warms your soul, filled with tender beef, vibrant vegetables, and hearty barley.

  • 2 lbs Beef (Chuck Roast or Stew Meat)
  • 1 cup Barley
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 1 Onion, chopped
  • 4 cloves Garlic, minced
  • 6 cups Beef Broth
  • 2 Bay Leaves
  • 1 tsp Thyme
  • Salt and Pepper, to taste
  • 1 tbsp Olive Oil

Instructions

  1. Prep your ingredients: chop beef, vegetables, and herbs.
  2. Sear the beef in a large pot with olive oil over medium heat until browned, about 5-7 minutes.
  3. Add onions and garlic, sautéing for about 3-4 minutes until translucent.
  4. Incorporate the celery and carrots, letting them cook for 5 minutes.
  5. Pour in the beef broth and bring to a simmer, scraping the bottom of the pot.
  6. Add barley, bay leaves, and thyme, stirring to combine.
  7. Season to taste and simmer covered for about 60 minutes until barley is tender.
  8. Remove bay leaves before serving and garnish with fresh parsley.

Notes

Let the soup sit for an hour before serving for enhanced flavor. Store leftovers in an airtight container.
