Warm and Hearty Kielbasa Potato Soup

A cozy and flavorful Kielbasa Potato Soup that warms you up from the inside out, perfect for chilly evenings.

  • 1 tbsp olive oil
  • 1 pound kielbasa
  • 1 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 2 carrots (peeled and cut into half-moons)
  • 5 medium waxy potatoes (peeled and cut into bite-sized pieces)
  • 1 tsp sweet paprika
  • 1 tsp dried marjoram
  • 1 can (14 oz/400 g) white beans
  • 5 cups chicken broth
  • ½ cup cream cheese (at room temperature)
  • ½ tsp black pepper
  • 2 tbsp chopped dill

Instructions

  1. Sauté the Kielbasa: In a large pot, heat the olive oil over medium heat. Once hot, add in the sliced kielbasa. Cook for about 5-7 minutes, stirring occasionally, until they’re nicely browned.
  2. Add Onions and Garlic: Toss in the diced onion and minced garlic right into the pot with the kielbasa. Sauté for another 3-4 minutes until the onions are soft and translucent.
  3. Mix in Carrots and Potatoes: Stir in the carrots and potatoes and let them cook for about 3-5 minutes.
  4. Spice It Up: Sprinkle in the sweet paprika and marjoram, stirring well to coat the vegetables.
  5. Combine with Broth and Beans: Pour in the chicken broth, adding the white beans as well. Bring to a gentle boil, then reduce heat and cover. Let it simmer for about 20-25 minutes.
  6. Creamy Finale: Once your vegetables are tender, scoop in the cream cheese. Stir until it’s completely melted and incorporated.
  7. Adjust Seasonings: Taste and add black pepper and salt to your liking.
  8. Garnish and Serve: Stir in the chopped dill right before serving.
