Marry Me Chicken Soup

A cozy and heartwarming chicken soup featuring sun-dried tomatoes and spinach, perfect for impressing loved ones.

  • 1 lb Boneless, skinless chicken breasts
  • 1/2 cup Sun-dried tomatoes (oil-packed)
  • 2 cups Fresh spinach
  • 3 cloves Garlic (minced)
  • 1/2 cup Parmesan cheese (grated)
  • 1 cup Heavy cream
  • 4 cups Chicken broth (low-sodium)
  • 1 tbsp Olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Dice the chicken, chop the tomatoes, and mince the garlic.
  2. Sauté the chicken: Heat olive oil in a large pot, add chicken, season, and cook until browned (about 5-7 minutes).
  3. Add garlic and tomatoes, stir for about 1-2 minutes until fragrant.
  4. Pour in the chicken broth and scrape up brown bits. Let it come to a gentle boil.
  5. Incorporate the cream and simmer until it thickens slightly.
  6. Add spinach and let it wilt for 2-3 minutes.
  7. Finish with Parmesan, stir until melted, and adjust seasoning to taste.
  8. Serve the soup in bowls and top with extra Parmesan if desired.

Notes

This soup can be made in advance and stored in the fridge for up to 3 days. Serve with crusty bread for dipping.
