Tuscan Garbanzo Bean Soup

A comforting and creamy Tuscan Garbanzo Bean Soup packed with flavors of garlic, herbs, and fresh spinach.

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons tomato paste
  • 2 (15 oz) cans chickpeas (drained and rinsed)
  • 34 cups low sodium vegetable broth
  • 1/3 cup sundried tomatoes in oil (chopped)
  • Juice of 1/2 lemon
  • 1 cup full-fat coconut milk from a can (OR 1/2 cup heavy cream)
  • 23 cups fresh spinach
  • Salt and black pepper to taste
  • Fresh basil leaves (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat for about a minute.
  2. Toss in the diced onion and sauté for about 5 minutes until translucent.
  3. Add the minced garlic and red pepper flakes, sautéing for another minute.
  4. Stir in the tomato paste and cook for about 2 minutes.
  5. Incorporate the drained chickpeas and cook for 2 more minutes.
  6. Pour in 3-4 cups of vegetable broth and let it come to a gentle boil.
  7. Toss in the chopped sundried tomatoes and simmer for about 10-15 minutes.
  8. Add the coconut milk (or heavy cream) and simmer for another 5-10 minutes.
  9. Stir in the fresh spinach and cook until just wilted.
  10. Squeeze in the lemon juice, adjusting seasonings as needed.
  11. Serve in bowls, garnished with fresh basil leaves.

Notes
