Tuscan White Bean Soup

A cozy and hearty Tuscan White Bean Soup made with protein-packed beans, fresh spinach, and aromatic herbs, perfect for warming up on chilly days.

  • 2 cans White Beans (canned or soaked dried beans)
  • 4 cups Fresh Spinach
  • 1 can Canned Tomatoes (diced or crushed)
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 tablespoon Herbs (thyme, rosemary, or Italian seasoning)
  • Salt and Pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Prep your ingredients by chopping the onion, mincing the garlic, and slicing the spinach.
  2. Sauté the onion in olive oil over medium heat until soft and translucent, about 4-5 minutes. Add garlic and cook for another minute.
  3. Add the canned tomatoes and vegetable broth. Bring to a gentle simmer for 5-10 minutes.
  4. Incorporate the drained and rinsed beans into the pot, stirring well.
  5. Flavor with fresh herbs, crumbling thyme or rosemary over the soup.
  6. Let the soup simmer on low heat for about 20 minutes, stirring occasionally.
  7. Finishing touches: Add chopped spinach and stir until wilted, about 2-3 minutes. Season with salt and pepper.
  8. Serve the warm soup in bowls with a drizzle of olive oil and freshly cracked black pepper.

Notes

For an extra touch, serve with warm crusty bread or a sprinkle of grated Parmesan cheese. Feel free to add a pinch of red pepper flakes for a spicy kick.
