White Chicken Chili

A creamy and comforting White Chicken Chili that warms your heart and fills your belly, perfect for chilly evenings.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 cans (15 oz each) great northern or cannellini beans, drained
  • 1 can (4 oz) diced green chiles
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 8 oz cream cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare your chicken. Season lightly with salt and pepper, sauté in olive oil for 5-7 minutes per side until cooked. If using rotisserie chicken, shred it.
  2. Sauté the chopped onion in the same pot until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  3. Combine the cooked chicken, white beans, green chiles, chicken broth, cumin, and chili powder. Mix well.
  4. Let it simmer on medium-low for about 20-30 minutes, stirring occasionally.
  5. Add cream cheese and stir until melted and incorporated. Adjust seasoning with salt and pepper.
  6. Serve with chopped cilantro on top.

Notes

This chili tastes even better the next day. It’s perfect for meal prep or gatherings.
