Peach Cookies

Sweet and soft peach cookies that encapsulate the essence of summer in every bite.

Ingredients

  • 2 1/8 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 large ripe peaches (peeled, pitted, and cut into 1/4-inch pieces; about 1 to 1 1/2 cups)
  • 1/3 cup peach preserves
  • 3 tablespoons sanding sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: whisk together the flour, salt, and baking soda.
  3. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla extract and mix until just combined.
  5. Incorporate the dry ingredients gradually to the wet mixture.
  6. Fold in the peaches and peach preserves gently.
  7. Scoop cookie dough onto a lined baking sheet and sprinkle with sanding sugar.
  8. Bake for 10-12 minutes or until edges are set and golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Feel free to substitute gluten-free flour or coconut oil if needed. Experiment with adding nuts or chocolate chips for variations.
