Cherry Amaretto Upside-Down Cake

  • 2 cups maraschino cherries, drained
  • 1/4 cup unsalted butter (for browning)
  • 1/2 cup brown sugar, packed
  • 2 tbsp amaretto liqueur
  • 1/2 cup unsalted butter (for cake batter)
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk (or dairy-free alternative)
  • 1 tsp pure vanilla extract
  • 1 tbsp amaretto liqueur (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Prepare the cherry layer by melting 1/4 cup of butter, then stirring in 1/2 cup of brown sugar. Add cherries and amaretto, simmer, and pour into the cake pan.
  3. Make the cake batter by creaming together 1/2 cup softened butter and 1 cup sugar, then adding eggs, milk, amaretto, and vanilla extract.
  4. Combine the dry ingredients in a separate bowl and gradually fold them into the wet mixture.
  5. Pour the cake batter over the cherry topping in the pan.
  6. Bake for 35-40 minutes or until a toothpick comes out clean.
  7. Cool the cake in the pan for 10 minutes, then flip it onto a plate.
  8. Serve warm or at room temperature, optionally with ice cream or whipped cream.
