Creamy Lemon Cheesecake

  • 1 ½ cups Graham Crackers, crushed
  • ¼ cup Granulated Sugar
  • ½ cup Unsalted Butter, melted
  • 16 oz Cream Cheese, softened
  • ¾ cup Granulated Sugar
  • 3 large Eggs, at room temperature
  • 1 cup Sour Cream
  • ½ cup Fresh Lemon Juice
  • 2 tablespoons Lemon Zest

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine the crushed graham crackers, granulated sugar, and melted butter in a mixing bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake in the preheated oven for about 10 minutes.
  5. Beat the softened cream cheese with an electric mixer until smooth and creamy.
  6. Add the sugar gradually and mix until blended.
  7. Add the eggs one at a time, mixing on low speed after each addition.
  8. Stir in the sour cream, lemon juice, and zest until well combined.
  9. Pour the filling over the cooled crust.
  10. Bake the cheesecake for about 55-60 minutes.
  11. Cool the cheesecake in the oven for about 1 hour.
  12. Chill in the fridge for at least 4 hours or overnight.
