Quick Mediterranean Chicken Tacos

A tantalizing blend of savory chicken, fresh veggies, and punchy flavors all wrapped in a warm tortilla.

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prepare the chicken by tossing the diced chicken breast with olive oil, garlic powder, paprika, salt, and pepper. Let it marinate for about 15 minutes.
  2. Cook the chicken in a heated skillet on medium-high for about 6-8 minutes until golden and cooked through.
  3. Warm the tortillas either in a dry skillet for 30 seconds per side or in the oven wrapped in foil for 10 minutes.
  4. Prepare the toppings by washing and chopping the cherry tomatoes, cucumber, and red onion.
  5. Assemble the tacos by layering the chicken mixture, fresh veggies, crumbled feta, and parsley or cilantro onto the tortillas.
  6. Serve the tacos on a platter and enjoy with extra cherry tomatoes and cucumber on the side.

Notes

Add jalapeños for spice or avocado for creaminess. Can also be made gluten-free with appropriate tortillas.
