Radish Top Pesto

A sustainable and flavorful pesto made from radish tops, perfect for pasta, bread, or as a dip for veggies.

Ingredients

  • 4 cups packed radish tops/greens
  • 2 large garlic cloves
  • ½ cup pine nuts or other tree nuts (like almonds or walnuts)
  • ½ cup shredded Parmesan cheese
  • Juice from half a lemon (or 1 Tbsp. bottled lemon juice)
  • ½ cup extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Prep your greens by rinsing radish tops thoroughly and roughly chopping them.
  2. Tackle the garlic by peeling it and lightly smashing before adding to the food processor.
  3. Toss in the pine nuts with the garlic in the processor and pulse until crumbly.
  4. Say hello to the greens by adding them to the processor and pulsing until finely chopped.
  5. Sprinkle in the shredded Parmesan cheese and pulse until mixed.
  6. Now, drizzle in olive oil while the processor runs until you achieve a creamy texture.
  7. Finish off by squeezing in lemon juice and adding salt and pepper to taste.
  8. Taste test and adjust flavors as needed.

Notes

This pesto can easily be frozen in ice cube trays for quick use in the future.
