Reuben Soup

A cozy twist on the classic Reuben sandwich, this delicious soup features tender corned beef, tangy sauerkraut, and creamy Swiss cheese, bringing comfort in every bowl.

Ingredients

  • 8 oz corned beef, chopped
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup heavy cream
  • 4 cups vegetable or beef broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp caraway seeds
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Prep your ingredients by chopping the onion and corned beef.
  2. Sauté the onion in olive oil over medium heat until translucent, then add garlic.
  3. Add the corned beef and cook for about 5 minutes until caramelized.
  4. Stir in sauerkraut and cook for another 2-3 minutes.
  5. Pour in broth and let simmer for about 20 minutes.
  6. Reduce heat and stir in heavy cream, heating through.
  7. Add Swiss cheese and stir until melted.
  8. Serve hot and enjoy, optionally garnished with fresh herbs.

Notes

Can be served with crusty rye bread or a side salad. Adjust seasoning to taste.
