Acorn Squash Bread

A deliciously cozy Acorn Squash Bread that captures the essence of fall with its warm spices and sweetness.

  • 1 cup acorn squash (mashed or pureed)
  • 1 cup sugar
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • 2 tablespoons butter (melted)
  • ½ teaspoon vanilla
  • 2 eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the acorn squash by cutting it in half and roasting it until tender.
  3. Mix the wet ingredients in a bowl until well blended.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Combine the dry ingredients in a separate bowl.
  6. Mix everything together until just combined, being careful not to overmix.
  7. Pour the batter into a greased loaf pan.
  8. Bake for about 60-70 minutes until a toothpick comes out clean.
  9. Cool in the pan for 15 minutes before transferring to a wire rack.

Notes

For a nutty twist, add chopped walnuts or pecans. You can also use pumpkin or butternut squash instead of acorn squash.
