Baked Pumpkin Spice Donuts

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for cinnamon sugar)
  • 1 teaspoon ground cinnamon (for cinnamon sugar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour, sugar, baking powder, pumpkin pie spice, and salt in a mixing bowl.
  3. Mix the milk, pumpkin puree, egg, melted butter, and vanilla extract in a separate bowl.
  4. Combine the wet ingredients into the dry mixture and fold together until just combined.
  5. Fill the donut pan cavities about 2/3 full.
  6. Bake for 10–12 minutes until a toothpick comes out clean.
  7. Cool the donuts for 5 minutes in the pan, then transfer to a wire rack.
  8. Coat the warm donuts in a mixture of granulated sugar and cinnamon.

Notes

These donuts are best enjoyed fresh but can be stored in an airtight container for up to 3 days. For added flavor, try folding in chocolate chips or nuts.
