Sweet Potato Shepherd’s Pie

A cozy classic Shepherd’s pie with a twist, featuring lean ground turkey, vibrant mixed vegetables, and a creamy sweet potato mash.

  • 2 pounds Sweet Potatoes, peeled and diced
  • 1 tablespoon Olive Oil
  • 1 pound Ground Turkey
  • 2 cups Mixed Vegetables (Carrots, Peas, Corn)
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the sweet potatoes until tender, about 15-20 minutes.
  3. Sauté the ground turkey in a skillet with olive oil until cooked through.
  4. Add the mixed vegetables and cook for an additional 5-7 minutes.
  5. Season with salt, pepper, garlic powder, and onion powder.
  6. Mash the sweet potatoes with olive oil, salt, and pepper.
  7. Layer the turkey mixture in a casserole dish, topping with the mashed sweet potatoes.
  8. Bake for 25-30 minutes until golden on top.
  9. Cool for 5-10 minutes before serving.

Notes

Add fresh parsley for garnish and serve with a light side salad or whole-grain bread.
