Yellow Squash and Zucchini Casserole

A comforting and delicious casserole featuring yellow squash and zucchini, perfect for summer.

Ingredients

  • 2 cups yellow squash, sliced
  • 2 cups zucchini, sliced
  • 1 cup onion, chopped
  • 2 cups shredded cheese (e.g., cheddar or mozzarella)
  • 1 cup bread crumbs
  • 1/2 cup milk
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil or butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the veggies by slicing yellow squash and zucchini into about 1/4-inch rounds.
  3. Chop the onion into small pieces.
  4. Sauté the onion in a skillet with olive oil over medium heat until translucent, about 5 minutes (optional).
  5. Combine the sliced squash, zucchini, and sautéed onion in a large mixing bowl, seasoning with salt and pepper.
  6. Mix the eggs and milk in a separate bowl and then stir in the shredded cheese.
  7. Add the bread crumbs to the cheese mixture and stir until combined.
  8. Combine the cheese mixture with the vegetables until coated.
  9. Grease a 9×13 inch baking dish with olive oil or butter.
  10. Transfer the mixture into the baking dish, spreading it evenly and topping with reserved cheese.
  11. Bake for 30-35 minutes until golden brown and bubbly.
  12. Cool for a few minutes before serving.

Notes

Serve hot alongside a fresh salad or as a side for protein dishes. Can be made in advance and frozen.
