Zucchini Pizza Casserole

A delicious low-carb casserole that combines all the flavors of pizza while keeping it light and nutritious.

  • 4 cups Zucchini (Grated)
  • 1 teaspoon Salt
  • 2 large Eggs (Beaten)
  • 1/2 cup Parmesan Cheese (Grated)
  • 1 cup Mozzarella Cheese (Shredded)
  • 1 cup Cheddar Cheese (Shredded)
  • 1 pound Ground Beef
  • 1 medium Onion (Chopped)
  • 1 cup Pizza Sauce
  • 1 cup Green Bell Pepper (Chopped)
  • 1 cup Mushrooms (Sliced)
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Garlic Powder
  • To taste Black Pepper

Instructions

  1. Prep the Zucchini: Grate your zucchini using a box grater or a food processor. Place it in a clean kitchen towel and squeeze out excess moisture.
  2. Combine with Salt: In a large mixing bowl, toss the grated zucchini with salt and let it sit for about 10 minutes.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C).
  4. Cook the Meat: In a medium skillet, brown the ground beef and chopped onion over medium heat until fully cooked.
  5. Mix Everything Together: In your mixing bowl, combine the cooked meat, onions, squeezed zucchini, beaten eggs, Parmesan cheese, half of the mozzarella cheese, oregano, garlic powder, black pepper, bell pepper, and mushrooms.
  6. Layer and Pour: Prepare a greased 9×13 inch baking dish, spread the zucchini mixture evenly, and pour the pizza sauce over the top.
  7. Top with Cheese: Sprinkle the remaining mozzarella cheese and cheddar cheese on top.
  8. Bake: Bake for 30-35 minutes until the cheese is bubbly and golden.
  9. Cool and Serve: Let it cool for about 10 minutes before slicing.

Notes

You can prepare this casserole ahead of time and bake it when you’re ready to serve. Adjust the vegetables according to your preference!
