Zuppa Toscana

A hearty Italian soup with spicy sausage, tender potatoes, and robust kale in a creamy broth.

Ingredients

  • 1 lb Italian sausage (spicy or mild)
  • 4 medium Yukon Gold potatoes, diced
  • 1 bunch kale, chopped
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp red pepper flakes

Instructions

  1. Brown the sausage in a large pot over medium heat for about 5-7 minutes.
  2. Sauté the onion and garlic for about 3 minutes until translucent.
  3. Add the diced potatoes and chicken broth, then bring to a boil and simmer for 15-20 minutes until potatoes are tender.
  4. Incorporate the kale and cook for another 5 minutes.
  5. Finish by stirring in the cream, and season to taste with salt, pepper, and red pepper flakes.
  6. Taste and adjust seasonings as needed.
  7. Serve in bowls, garnished with Parmesan cheese and olive oil.

Notes

Serve with crusty bread for dipping. Can be made in advance and stored in the fridge for up to three days.
